Elf for Health Challenge

So excited to be part of the Elf 4 Health Challenge. This is a six week challenge, where I am partnered with another fitness minded buddy, Elf, to encourage and motivate each other to make healthy choices and keep moving during the holidays. We have different challenges each day and every two weeks we are partnered with a new Elf.

My Elf for the first round is SarahKerner. Our first challenge is to go meatless for Monday. I emailed Sarah my recipe for a chunky veggie salad. Check it out!

Chunky Veggie Salad

Mix together

1/3 cup chickpeas

1/3 cup kidney beans

1/4 cup diced red apple

1/4 cup diced cucumber

1 tbls. diced celery

1 tbls. pumpkin seeds

Dressing ( I measure these ingredients by taste)

Juice of 1/2 a lemon

2 tsp. olive oil

1 tbls. red wine vinegar

1 tsp. ground cumin

Pinch of salt and sugar

Whisk these ingredients together and drizzle on salad
